Abstract<\/span><\/h3>\n

The study was conducted at the College of Education for Pure Sciences (Ibn Al-Haitham University of Baghdad; the study included collection of 73 samples of sheep meat that collected randomly from the local approved government slaughter areas in Baghdad (Al-Karkh and Al-Rusafa). The collected samples involved 50 samples from fresh sheep meat (25 liver and 25 triceps muscles), 13 of minced meat and 12 of basterma samples. All the meat samples were cultured on appropriate medium and then diagnosed;Two methods of culture were used which are direct and indirect to detect Fungi in the samples. The results of direct method found the following fungi: Aspergillus spp.,Penicilliumspp., Rhizopusspp. ,Mucorspp., Cladosporiumspp.,Fusarium spp.,Moniliella and Yeastspp., while Aspergillus spp. is the most common genus that isolated from the samples. While in indirect methods of the culture, the following fungi were isolated: Aspergillus spp., Penicilliumspp.,Rhizopusspp., Mucorspp.,Cladosporiumspp., Fusarium spp., Moniliellaspp., Botrytis spp., Trichotheciumspp. and Ulocladiumspp.,Yeast Spp,while yeasts were the most common fungi in the samples except in the muscles where Aspergillus spp. was the predominant fungi in both isolation methods.<\/span><\/h3>\n

The results of the detection of aflatoxin B1 showed that 71 of the collected samples were contaminated with different concentrations of aflatoxin ranging from 42ppb-467 ppb, 242ppb-459ppb, 25ppb-422ppb and 65ppb-492 ppb for the samples of minced meat, basterma,liver and muscles respectively.<\/span><\/h3>\n

Toxin degradation using ultraviolet radiation of samples with highest concentration using ultraviolet radiation for two distances (60 cm and 120 cm) for 15 and 30 minutes per distance;the results showed a significant difference (p<0.01) between the two times (15 and 30 minutes) for same distance, and also a significant difference (p <0.01) between two distances using the same time, and the best method for sample degradation was in the distance of 60 cm for 30 minutes, where the toxin concentration was reduced from 467ppb to 74.5 in the minced meat, in basterma from 459ppb to 112ppb, in the liver from 492ppb to 100ppb and in meat from 422ppb to 102.5ppb. Interestingly, using of ozone method, where dry ozone was used with weight of 2 gm and 4 gm and for 5 and 10 minutes for each weight, the results showed significant differences between different times for the same weight and also between different weights at the same time, and the effective method in the reduction of toxin concentration was at 4 gm for 10 minutes; the concentration of toxin was reduced in meat from 467ppb to 12pp, in basterma from 459ppb to 21.5ppb, in liver from 492ppb to 22ppb,and meat from 422ppb to 22.5ppb.<\/span><\/h3>\n

The results of the histopathological study in the liver at the concentration 492 ppb showed that there were increases in the diameter of the nuclei, water dehydration and necrosis,while at concentration 467 ppb there were increases in the diameter of in the nuclei and increases in the number of kupffr cells, whileatc on concentration 65 ppb no obvious damages were seen.<\/span><\/h3>\n

In the muscles, the results showed that the concentrations of 422ppb and 384ppb had a structural damages including homogeneous aggregation of the acid, whereas at concentration 25 ppb there was no damage.<\/span><\/h3>\n

The results of the immuno-histological study of the studied concentrations of the toxin in both liver and muscle using TNF-\u03b1 as a marker that the liver at 492 ppb showed a strong immunological expression (+++), while the expression was (++)at 467 ppb, while no expression was seen (-) at the concentration 65ppb.
